JOB SUMMARY: The Assistant Food & Beverage Manager oversees all aspects of the F&B operations and all its services. This is including: set-up of each meal period, service of outlets, creation of concepts and innovating the department while focusing on detail, quality and customer service. The Assistant F&B Manager is also responsible for all aspects of supervision of restaurant staff including: hiring, training, coaching, disciplining and reviewing performance of the staff on daily/weekly/monthly/annual basis. 

Essential Duties and Responsibilities

Primary Duties

 

Achieve budgeted food and beverage sales and labor costs.

Achieve maximum profitability and over-all success by controlling costs and quality of service. 

Maintain control of restaurant china, cutlery, glassware, linen and equipment.

Oversee annual/quarterly inventory projects and ensuring budget requests are submitted on time. 

Complete/Supervise Payroll and Tips in an accurate and timely fashion.

Complete weekly schedules and daily POAs. Schedule staff as necessary to ensure adequate and consistent levels of service. 

Supervise and coordinate daily operation of the outlets, including preparation and service of all meal periods. 

Ensure all meal periods are set and staff is prepared and organized before the required time of the meal period. 

Inspect tables and place settings, including, table linen, china, glass, silverware and condiments for correct placement and ensure each element is clean, undamaged and attractive. Attention to detail is essential. 

Ensure proper setting on tables and on the hotline for the required meal period. 

Complete and supervise requisitions including Warehouse/NABevs/Liquor Orders.

Maintain the Hotel Bar control policies, in accordance with State laws.

Follow the proper purchasing and requisitioning procedures. 

Maintain records for equipment inventories, monthly stock inventory, labor cost, food cost, etc.

Develop and maintain all department control procedures. 

Develop and maintain the department training manual. 

Develop and maintain the department’s image. 

Consistently check Food and Beverage quality, restaurant services and plate presentation. 

Ensure quality of room set-up. 

Liaise on an on-going basis with the Restaurant Manager to ensure all client needs and requirements will be met. 

Ensure visibility on the floor, touching tables during services. 

Provide quick service for last minute changes. 

Appropriately handle guest issues and requests in a professional and punctual manner.

Manage staff morale and appearance. 

Ensure correct cash handling protocol, including, server check dropping, post event receipt drop, and correct change process. 

Coordinate the general housekeeping of Madison’s, public areas, kitchen, storage areas, entrance areas, etc. 

Effectively communicate with coworkers and guests, verbally and written. 

Manage staff training and development. 

Use appropriate disciplinary action of subordinates, when required. 

Due to the nature of this position, confidentiality is required at all times.

Other duties and responsibilities may be assigned at the discretion of the Restaurant Managers or F&B Directors.

 

Supervisory Responsibilities:

  • Assistant F&B Manager has the authority to coach, promote, transfer, counsel or discipline subordinate employees or recommend such actions.
  • Job Titles That Report Directly to the Assistant Food and Beverage Manager: Server, Busser, Host 

QUALIFICATIONS:   

Education and/or Experience:

High School Diploma/GED required. A 2 or 4-year degree in hospitality or business management is an asset, but not required. Previous supervisory experience is desired. Knowledge of food and beverage operations and preparation is desired. 

Skills Required:

Ability to work well with a large group of people in a team environment. Must be able to work well in stressful, high-pressure situations, including the ability to handle guest complaints and disputes and resolve them to satisfactory results. Ability to maintain composure and objectivity under pressure. Must be effective at listening to, understanding and clarifying concerns and issues raised by team members and guests. Ability to work a flexible schedule, including nights, days, weekends and holidays. 

 Language Skills:

Excellent communication and guest relation skills in English is required. 

 Reasoning Ability:                                            

Must have ability to apply common sense understanding to carry out instructions furnished in written, oral or diagram form.  

 Physical Demands:                                            

The employee is regularly required stand and walk as well as frequently reach, kneel, push, pull, carry, lift and move objects 50 pounds or more. The employee must have normal vision (corrected), hearing and verbal communication.
